Simonsig Sauvignon Blanc Semillon

The Simonsig Sauvignon Blanc Semillon is a white wine made with Sauvignon Blanc and Semillon grapes. It goes through a two-day cold soak before being inoculated with yeast. For the best color and fruit extraction, a combination of automated and aerated pump overs is used. Then comes gentle pressing, with wine tasting being crucial in identifying the optimal fraction. Malolactic fermentation takes place in the tank, followed by 20 months of wood maturation in both French Oak and American Oak.

The Simonsig Sauvignon Blanc-Semillon is a wine that exudes youth with its vivid color—a gorgeous young green hue. On the nose, you get tropical fruit and bold green pepper, with green fig undertones, and hints of plum and kiwi scents. On the palate, complex layers of fresh, crisp fruit interact with zesty acidity, creating a well-balanced and delightful white wine. It finishes with a smokey gunflint, and zesty citrus and gooseberry notes.

This South African wine is a refreshing blend that invites a pairing of fresh seafood, cooked simply. It also goes so well with cheeses made with goat’s milk.

STORAGE INSTRUCTIONS
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
