Sarah’s Creek Cabernet Sauvignon

A popular cultivar that is produced on limestone and shale soils. The vineyards are managed to ensure the fruit is not shaded. This Cabernet Sauvignon shows notes of blackcurrant, cassis and dried herbs. The palate is structured and soft with a smoky finish.

Planted in a primarily limestone, secondarily shale soil – the goal was to make a wine that displays bold fruity flavours and soft tannins, while preserving an excellent composition. This is a tall task, but through strict canopy management and harvesting at optimal ripeness, shaded fruit can be prevented.
