Codorniu Vintage Brut 2019, a wine produced by one of the largest cava producers in the world, along with Freixenet.
Vineyards
Codorníu has vineyards that span three Denominación de Origen (DO) regions: Penedes, Conca de Barbera, and Costeres del Segre. After harvest, grapes from each region are brought to the same winemaking facility, where they are pressed, fermented separately, and then blended.
These blends are then bottled before undergoing secondary fermentation. Codorníu’s cavas are aged in bottle, sur lie, for between 9-36 months, before they are riddled and disgorged.
Yield levels (maximum 1hl of must per 150kg of grapes), alcoholic strength (between 10.8 and 12.8 percent), atmospheric pressure (minimum of four atmospheres) and a minimum of nine months spent on lees are requirements for wines seeking DO Cava status.
Cava can be produced to a range of dryness levels, including rosé Cava, by adding a small percentage of red wine to the blend. The levels of dosage, from driest to sweetest, are Brut Nature, Extra Brut, Brut, Extra Seco, Seco, Semi-Seco and Dulce.
