This Tokara Reserve Sauvignon Blanc Elgin is crafted from grapes grown on Tokara’s Highlands farm in Elgin, an area renowned for its cool climate and ideal growing conditions.
The wine is a blend of the top-performing blocks, carefully selected for their exceptional flavor and aromatic profiles, making it a standout in the world of Sauvignon Blanc wines.
Cropping and Harvesting
The vines were cropped between 7 to 9 tons per hectare, and once the grapes reached optimal ripeness, they were hand-picked at dawn.
The sugars ranged from 21.5 to 22.5 degrees brix, and the acidity between 6.5 g/l to 9.5 g/l, ensuring a perfect balance of sweetness and freshness. The grapes were then carefully cooled before being transported to Tokara’s winery in Stellenbosch.
Winemaking Process
Upon arrival, the grapes were destemmed, crushed, and cold-pressed using an inert press to maintain freshness. The best free-run juice from the top blocks was fermented at 15°C in stainless steel tanks with selected yeast.
To add complexity, 4% of this blend was fermented in 400L 3rd-fill barrels and aged for 5 months. The wine was left on its lees, regularly stirred for added creaminess, then stabilized, filtered, and bottled, resulting in a wine that is both vibrant and full of character.
Tasting Notes
This Sauvignon Blanc offers a stunning light straw color with a brilliant green edge. On the nose, it opens with vibrant aromas of passion fruit, lime juice, and a hint of lemongrass and elderflower, creating an aromatic profile that is both fresh and inviting.
The palate is equally refreshing, with zesty green apple flavors leading to a creamy mid-palate and a lingering, saline finish that leaves a lasting impression.
Food Pairing
Best served chilled, this Sauvignon Blanc is ideal as an aperitif or paired with fresh summer oysters, grilled yellowtail with salsa verde, or salmon roses with kewpie mayo and caviar. Its crisp acidity and refreshing flavors make it the perfect companion to light, flavorful dishes.
