Description
The Paul Cluver Village Pinot Noir is crafted from grapes grown in Bokkeveld Shale soils with clay layers, on slopes 280-400m above sea level.
Harvested at 21-23° Brix in Elgin’s cool climate, the grapes retain their natural freshness. After hand sorting, cold maceration (12-14°C) and fermentation with Burgundian yeast, the wine undergoes malolactic fermentation in French oak barrels, tanks, and wooden vats. Partially aged for 12 months, it delivers elegance, complexity, and silky smoothness.
